When visiting Caro and Dan in Bavaria he made this vegan dish from his home. Indonesian Fried Beans with Tofu homemade! Sometimes you don’t need to travel far to experience great cooking and flavours. Thanks Dan

  1. Shallow fry tofu pieces until crispy on the outside but still soft on the inside. Set aside when done on a paper towel
  2. Same time par boil beans in boiling water with some salt. bean should still have a crunch to them. Set aside
  3. In a large wok or pan use 2 tbs of oil, fry shallot, garlic, bay leaf, chili, galangal. Around 2 minutes
  4. Before turning translucent, add beans to the wok/pan. Fry for a another 2 minutes
  5. Add tofu pieces. Fry for another 1 minute
  6. Add Tamarind with water, soy sauce, salt & sugar
  7. Stir until all mixed well
  8. Serve with Jasmine or Pandam Rice

Tipp: Try to buy all ingrdients in an Asian supermarket. Especially the Kecap Manis. Kecap Manis should be an Indonesia brand. If you cannot find indonesian bay leaf, please omit. Do not substitute with European or Indian bay leaf

• Tofu 500 (fresh) cut in 1.5 cm cubes
• 1 large shallot (halved and thinly sliced)
• 2 garlic (cut in large slices)
• 1 large Indonesian bay leaf

• 1 large chili pepper (deseeded, halved, and cut in sliced pieces)
• 1 piece galangal (nail piece size peele, then crushed)
• 200g green beans (cut in 2 cm pieces, don’t forget to wash before)
• Oil for frying

• 2 tbs sweet soya sauce (kecap manis)
• 2 tsp of tamarind paste dissolved in 4 tbs of hot water
• Pinch of salt
• Pinch of sugar

Serves 4 person as side dish
