While been over to Bali I was invited over to Oppy into his villa for some Balinese food – we did some authentic BBQ there, I had a great time with my new friends!

  1. Mix both fish & shrimp in food processor until smooth. Mix in desicated coconut. Add 3 tablespoons of thick coconut milk.
  2. Mix onions, garlic, turmeric, ginger, chilli, salt & pepper until smooth.
  3. Combine both mixtures.
  4. If the mixture is still too dry, you may add 1 egg white and a bit of olive oil.
  5. Shape the mixture on sate sticks/lemongrass stalk, flatten slightly.
  6. Charcoal grill sate until light brown and cooked through.
  • 500g fresh tuna or salmon
  • 50 grams desiccated coconut
  • 6 pieces kaffir lime leaves (thinly sliced)
  • 2 tablespoons palm sugar
  • 8 shallots
  • 2 cloves garlic
  • 2 cm galangal or blue ginger
  • 2 chillis
  • 2cm Kencur
  • 1 tsp coriander seeds
  • 1cm fresh turmeric
  • 25 bamboo or fresh lemongrass skewers

Approx. 25 skewers
