Andalusian Fish Soup. Healthy and quickly done. For more flavour, you can use any fish leftovers like bones, heads or fins.

  1. After chopping all the ingredients add onions & carrots into hot oil and let it brown
  2. Add potato, zucchini and stir for some minutes, add garlic, sugar, pepper, paprika and dried herbs
  3. Stir and add fish broth over high heat
  4. Add frozen seafood and cook it for 30 minutes in covered pot
  5. Towards the end add fish filet over low heat and let if cook slowly.
  6. Ready for serving, you can add cold butter and chopped parsley if you want
  • 300g white fish filet
  • 500g frozen seafood (clams, calamari, shrimps etc)
  • 4 potatoes chopped
  • 100g zucchini chopped
  • 2 onions finely chopped
  • 2 carrots finely chopped
  • 2 garlic cloves finely chopped
  • 500ml fish broth
  • 250ml white wine
  • pinch of sugar
  • 1 tsp pepper
  • 1 tsp paprika
  • dried herbs (oregano or others)
  • 2 tbs oil
  • 1 tbs butter and fresh parsley if desired

Serves 4 persons.
