I love salmon filet. Here the BBQ version with crispy skin and very juicy meat.

  1. Remove bones from meat and scales from salmon skin (tutorial here)
  2. Mix all ingredients together and marinate the fish filet for 30 minutes at room temperature
  3. Prepare the BBQ with two temperature levels (high and low). Oil the grill rost.
  4. When BBQ is hot place salmon with skin on the BBQ and let it sit there for 5 minutes at least. Check if skin is not burning – DON’T move the filet as you would pull off the skin.
  5. Once the skin is crispy its easy to loose off the filet and move it over to the lower heat section.
  6. Let it cook there for 20 minutes. Be prepared the to will be bit glazy (if you don’t like it you can turn it towards the end over low heat and finish it)
  7. Now its ready for serving, cut it or leave it in one peace for presentation
  • 500g salmon filet with skin
  • 2 garlic cloves finely chopped
  • 1/2 lemongrass stick finely chopped
  • 1 tsp ground pepper
  • 1/2 tsp salt
  • pinch of sugar
  • 1 tsp mustard
  • 1 tbs olive oil
