Cyclists have a rather healthy lifestyle, when I stayed with Rachel and Brett in Wellington they have just made a big batch of homemade muesli. I was never a big fan of muesli, especially these you can buy – all too sweet. Rachel’s muesli was great, little sweetness from the coconut and the dried fruits. Perfect and a great nutrition to start into the day…

  1. Mix oats, coconut, oil, milk & honey in a big bowl. The mix should not be soaked in liquid but be slightly wet
  2. Roast in oven at 150 degrees for 20 minutes
  3. Stir up occasionally
  4. In the meantime carefully roast almonds and seeds
  5. Mix all together and let it cool down
  • 300 g fat oats
  • 200 g small oats
  • 150 g dried shred coconut
  • 50 ml bran oil
  • 100 ml milk
  • 50 g honey (if desired)
  • 150 g dried fruits (to taste)
  • 50 g shred almonds
  • 50 g pumpkin seeds
  • 50 g sunflower seeds

Serves 15 portions
